Spicy Cilantro Lime “Vinaigrette”

img_7899This vinaigrette comes together in seconds and is a great way to add flavor to salads and raw dishes without weighing things down. I love it over cauliflower rice and my husband even likes to use it over cooked veggies like a light hot sauce. Enjoy playing with the flavors to make it exactly right for you! This recipe can be made vegan by substituting two dates in place of the honey; it is also raw and fat free.

Ingredients

  • 2 limes, juiced
  • 1 garlic clove
  • 1/3 jalapeƱo pepper
  • 1/4 cup cilantro leaves
  • 1 tablespoon honey
  • 1/2 cup water

Instructions

  1. Blend together all ingredients until smooth and enjoy! Keeps well in the fridge for 2-3 days. Separation may occur.
